The Standard

All Native Tree Farm teas are best brewed at 80°C.

We recommend this temperature to preserve the natural flavour of the leaf and prevent bitter notes from dominating the cup. Native botanicals carry distinctive aromatic and structural qualities — gentler heat allows their character to unfold more softly.

How to Reach 80°C

If you do not have a thermometer:

  1. Bring water to the boil.
  2. Allow it to sit for 3–5 minutes.
  3. Pour once the steam has softened slightly.

This method provides consistent results without harsh extraction.

Leaf to Water Ratio

For a balanced cup:

  • Loose leaf: 1 teaspoon per cup (250ml)
  • Tea bag: 1 bag per cup

For a stronger infusion, extend steeping time rather than increasing leaf quantity.

Steeping Time

  • Light infusion: 1 minute
  • Balanced infusion: 2 minutes
  • Full-bodied infusion: 4 minutes

Second Infusion

  • Loose leaf may be re-steeped once.
  • Extend the second infusion slightly to draw out remaining character.

Notes on Bitterness

Native botanicals are different from conventional herbal teas.
If bitterness occurs:

  • Reduce steeping time
  • Confirm water temperature remains near 80°C
  • Avoid squeezing tea bags excessively

Gentle preparation produces a more refined cup.

Powder & Latte Preparations

When using kawakawa latte:

  • Add 2 teaspoons to warm (not boiling) water.
  • Whisk until smooth.
  • pour in the frothed milk of your choice
  • Kawakawa latte can also be enjoyed milk free

Powders integrate differently from cut leaf and do not require steeping.
